Braised Green Peas
 (a different way of serving peas)

(for 3-4 persons as an accompanying vegetable)

230 g of green peas

3 leaves of lettuce cut in straps

3 finely cut spring onions

25 g of butter

salt and pepper

4 soupspoons of light meat-stock

chopped parsley to decorate

Brown the green peas, lettuce and spring onions with the butter in a pan, salt and pepper. Add the meat-stock, slowly heat to boiling, cover and let simmer for 15-20 minutes; The peas must be tender - if not simmer a little longer.

Place in a hot service dish and sprinkle with chopped parsley, then at once serve.
