Filet of Beef "Cyrano"
Ingrediants for 6 people

1 kg beef filet
250 g prunes from Agen (category "very large")
3 soupspoons of olive oil
1 small tine of "mousse de foie gras"
1 glass and a half of Madera
1 soupspoon of flour
salt, pepper and some sprigs of cress

Preparation :

Split the prunes down one slide. Remove the stonesand replace them with a spoonful of "mousse de foie gras".

40 minutes before serving, heat the oil in a saucepan and add the filet of beef. Spinkle it with flour, Pour the madera and half a glass of water over the meat and finally sprinkle with flour. Salt and pepper, cover and leave to simmer for 20 minutes.

Gently place the stuffed prunes in the sauce around the beef and let cook for another 10 minutes.

To serve, cut the roast into slices and put it on a hot serving plate, arrange the prunes around the meat and add a few sprigs of cress for decoration.
